Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp paprika

Instructions:

  1. Whisk the olive oil, melted butter, minced garlic, and dried herbs in a small bowl.
  2. Pat the chicken dry with paper towels and coat thoroughly in the garlic herb marinade.
  3. Heat a 12-inch oven-safe skillet over medium-high heat until the oil shimmers.
  4. Place chicken in the pan and sear for 5-7 minutes per side without moving them until golden-brown.
  5. Transfer the skillet to a preheated 400°F (200°C) oven for 5-8 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove from heat and let the meat rest for 5 minutes before serving.
