Ingredients:

  • 1 cup (225g) unsalted butter
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs
  • 1 tsp (5ml) vanilla extract
  • ¾ cup (65g) cocoa powder
  • ½ cup (60g) all-purpose flour
  • ½ tsp (3g) sea salt
  • 6 oz (170g) semi-sweet chocolate

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Melt the butter in a saucepan over medium heat, cooking until it foams and smells nutty (browned butter). Remove from heat immediately.
  3. Stir chopped semi-sweet chocolate into the hot butter until completely smooth; let cool slightly.
  4. In a large bowl, whisk granulated sugar and eggs vigorously for 3-5 minutes until the mixture is pale yellow and fluffy.
  5. Stir the vanilla extract into the egg and sugar mixture.
  6. Slowly pour the chocolate-butter mixture into the egg mixture, stirring with a spatula until combined.
  7. Sift in cocoa powder, flour, and salt. Fold gently until no streaks of flour remain, being careful not to overmix.
  8. Pour batter into the prepared pan, smooth the top, and bake for 30-35 minutes until edges are set but the center has a slight jiggle.
