Ingredients:
- 1 cup (225g) unsalted butter
- 1 ½ cups (300g) granulated sugar
- 3 large eggs
- 1 tsp (5ml) vanilla extract
- ¾ cup (65g) cocoa powder
- ½ cup (60g) all-purpose flour
- ½ tsp (3g) sea salt
- 6 oz (170g) semi-sweet chocolate
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
- Melt the butter in a saucepan over medium heat, cooking until it foams and smells nutty (browned butter). Remove from heat immediately.
- Stir chopped semi-sweet chocolate into the hot butter until completely smooth; let cool slightly.
- In a large bowl, whisk granulated sugar and eggs vigorously for 3-5 minutes until the mixture is pale yellow and fluffy.
- Stir the vanilla extract into the egg and sugar mixture.
- Slowly pour the chocolate-butter mixture into the egg mixture, stirring with a spatula until combined.
- Sift in cocoa powder, flour, and salt. Fold gently until no streaks of flour remain, being careful not to overmix.
- Pour batter into the prepared pan, smooth the top, and bake for 30-35 minutes until edges are set but the center has a slight jiggle.
