  • 1.5 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 4 cups fresh broccoli florets, bite-sized
  • 4 tbsp unsalted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
  2. Pat the chicken cubes dry with a paper towel to ensure a golden sear.
  3. In a large mixing bowl, whisk together the melted butter, minced garlic, Parmesan cheese, salt, pepper, and lemon juice until a thick paste forms.
  4. Toss the chicken cubes into the bowl and stir until each piece is fully enveloped in the sauce.
  5. Add the broccoli florets to the same bowl and toss lightly to coat the vegetables in the remaining garlic-butter mixture.
  6. Spread the chicken and broccoli across the pan in a single layer, ensuring pieces aren't touching to allow for proper air circulation.
  7. Bake for 15-20 minutes until the chicken is opaque throughout and the Parmesan has formed a golden-brown crust.
