Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) coconut sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1 cup (170g) dark chocolate chips (70% cocoa)
Instructions:
- Cream together the softened butter, brown sugar, and coconut sugar in a large bowl. Beat on medium speed until the mixture is pale and fluffy.
- Stir in the egg and vanilla extract until the batter looks glossy and well-combined.
- In a separate small bowl, whisk the flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet batter using a spatula; do not overmix.
- Gently stir in the dark chocolate chips until evenly distributed.
- Press the dough evenly into the bottom of a room-temperature 10-inch cast iron skillet.
- Bake at 350°F (175°C) for 18-22 minutes. Remove from the oven when the edges are a deep golden brown and the center is slightly puffed but still soft to the touch.
