Ingredients:
- 1.5 lb chicken breast, cut into 1-inch strips
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil spray
Instructions:
- Preheat your oven to 400°F (200°C) and place a wire cooling rack on top of a large baking sheet.
- Prepare the breading station: fill the first bowl with flour, the second with beaten eggs, and the third with panko breadcrumbs mixed with garlic powder, paprika, salt, and black pepper.
- Dredge each chicken strip in the flour, shaking off any excess.
- Dip the floured strips into the beaten eggs until fully coated.
- Press each strip firmly into the panko mixture until the chicken is completely encased in crumbs.
- Arrange the strips on the wire rack, ensuring they do not touch to allow for maximum air circulation.
- Spray the tops of the chicken strips evenly with olive oil spray.
- Bake for 20 minutes, using a meat thermometer to ensure the thickest part has reached an internal temperature of 165°F (74°C).
