Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 1 cup mini semi-sweet chocolate chips

Instructions:

  1. Cream the softened butter and sugar on medium-high speed using an electric mixer until the mixture is pale, nearly white, and looks like whipped cream. Mix in the vanilla extract.
  2. Sift the flour, cornstarch, and salt directly into the butter mixture. Mix on low speed just until combined, taking care not to over-mix.
  3. Gently fold in the mini chocolate chips by hand.
  4. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper or a silicone mat.
  5. Bake at 325°F (160°C) until the edges are barely golden and the centers are set.
