Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3/4 cup (165g) packed brown sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 cups (250g) Smarties or similar colorful candy-coated chocolates
- 2 tbsp (15g) rainbow sprinkles
Instructions:
- Cream together the softened butter, granulated sugar, and brown sugar using a mixer on medium-high until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully incorporated and smooth.
- Whisk the flour, baking soda, and salt together in a separate small bowl. Gradually add the flour mixture to the wet ingredients on low speed, mixing just until the white streaks disappear.
- Gently fold in 1 cup of the Smarties using a spatula. Scoop rounded tablespoons of dough (about 60g each) and place them on the lined baking sheet. Press 3-4 reserved Smarties and a pinch of sprinkles into the top of each ball.
- Bake at 350°F (175°C) for 10-12 minutes. Remove from the oven when the edges are just beginning to turn a golden tan, but the centers still look slightly soft. Let them cool on the pan for 5 minutes before transferring to a wire rack.
