Ingredients:

  • 1 box (15.25 oz) vanilla cake mix
  • 1 cup water
  • 1/2 cup melted unsalted butter
  • 3 large eggs
  • 4 oz unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp pure vanilla extract
  • 12 oz white melting wafers
  • 1 tsp coconut oil
  • 2 tbsp rainbow sprinkles
  • 38 cake pop sticks

Instructions:

  1. Bake the vanilla cake according to package instructions, then allow it to cool completely.
  2. Crumble the cooled cake into a large bowl using hands or a fork until it resembles fine sand with no large lumps.
  3. Beat together softened butter, powdered sugar, heavy cream, and vanilla extract until smooth.
  4. Gradually mix cake crumbs into the frosting until a play-dough consistency is reached.
  5. Roll the mixture into 1-inch balls and place on a parchment-lined tray; chill in the freezer for 15 minutes.
  6. Melt white chocolate and coconut oil in 30-second bursts in the microwave, stirring until smooth.
  7. Dip the tip of a cake pop stick into melted chocolate and insert halfway into a chilled cake ball.
  8. Submerge the entire ball into the melted chocolate, let excess drip off, and decorate with rainbow sprinkles before setting in a stand.
