Ingredients:

  • 680g Beef Sirloin Tips, cut into 3 cm cubes
  • 1 tsp kosher salt
  • 0.5 tsp coarsely ground black pepper
  • 2 tbsp avocado oil
  • 3 tbsp unsalted butter, chilled and cubed
  • 4 cloves garlic, smashed and peeled
  • 2 sprigs fresh rosemary or thyme
  • 0.5 tsp red pepper flakes

Instructions:

  1. Pat the 680g of beef sirloin tips with paper towels until the surface is completely bone dry. Season Heavily. Toss the cubes with 1 tsp salt, 0.5 tsp pepper, and 0.5 tsp red pepper flakes until every piece is evenly coated.
  2. Heat a large cast iron skillet over high heat. Add 2 tbsp avocado oil. Once the oil is shimmering and slightly smoking, add the beef in a single layer, ensuring the pan is not crowded.
  3. Use tongs to turn the pieces. Cook for another 2 to 3 minutes until the beef is browned on all sides.
  4. Lower the heat to medium high. Toss in 4 smashed garlic cloves and 2 sprigs of rosemary until the garlic smells fragrant. Drop in the 3 tbsp of chilled cubed butter. As it foams, tilt the pan and spoon the bubbling butter over the beef for 2 minutes until the meat looks glossy and dark.
  5. Transfer the beef tips to a warm plate. Pour the remaining garlic butter from the pan over the meat and allow it to rest for 5 minutes before serving.
