Ingredients:

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a large rimmed baking sheet with aluminum foil.
  2. Slice the chicken into uniform chunks approximately 2 inches in size.
  3. Place chicken chunks on the foil-lined pan, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, onion powder, and smoked paprika.
  4. Toss the meat until evenly coated and spread in a single layer on the pan.
  5. Bake for 20 to 30 minutes, or until a meat thermometer reaches an internal temperature of 165°F (74°C).
  6. Let the chicken rest on the pan for 10 minutes to retain moisture.
  7. Use two forks to pull the meat apart along the grain, or use a handheld mixer on low speed to shred.
