Ingredients:
- 1.5 lbs Yukon Gold potatoes, sliced into 1/2-inch rounds
- 1 large red onion, cut into 1-inch wedges
- 1 large bell pepper, sliced into thick strips
- 2 tbsp extra virgin olive oil
- 1 tsp coarse sea salt
- 1/2 tsp cracked black pepper
- 5 premium pork bratwursts (raw)
- 1 tsp smoked paprika
- 1/2 tsp caraway seeds
- 2 cloves garlic, smashed
Instructions:
- Preheat the oven to 400°F (200°C). Note: A hot oven is non negotiable for that immediate sear.
- Prep the 1.5 lbs Yukon Gold potatoes by slicing them into 1/2 inch rounds.
- Toss the potatoes, 1 large red onion wedges, and 1 large bell pepper strips in a large bowl.
- Add 2 tbsp extra virgin olive oil, 1 tsp coarse sea salt, 1/2 tsp cracked black pepper, 1 tsp smoked paprika, and 1/2 tsp caraway seeds.
- Mix in the 2 smashed cloves garlic, ensuring every vegetable is glistening with oil and spices.
- Spread the vegetable mixture across your baking sheet in a single layer.
- Nestle the 5 premium pork bratwursts into the vegetables. Make sure they touch the pan surface.
- Roast for 15 minutes. You should hear a faint sizzle as the fat begins to render.
- Flip the sausages and toss the vegetables gently using tongs to ensure even browning.
- Bake for another 10 minutes until the sausages are browned and the potatoes are tender.
