Ingredients:

  • 1.5 lbs Yukon Gold potatoes, sliced into 1/2-inch rounds
  • 1 large red onion, cut into 1-inch wedges
  • 1 large bell pepper, sliced into thick strips
  • 2 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • 1/2 tsp cracked black pepper
  • 5 premium pork bratwursts (raw)
  • 1 tsp smoked paprika
  • 1/2 tsp caraway seeds
  • 2 cloves garlic, smashed

Instructions:

  1. Preheat the oven to 400°F (200°C). Note: A hot oven is non negotiable for that immediate sear.
  2. Prep the 1.5 lbs Yukon Gold potatoes by slicing them into 1/2 inch rounds.
  3. Toss the potatoes, 1 large red onion wedges, and 1 large bell pepper strips in a large bowl.
  4. Add 2 tbsp extra virgin olive oil, 1 tsp coarse sea salt, 1/2 tsp cracked black pepper, 1 tsp smoked paprika, and 1/2 tsp caraway seeds.
  5. Mix in the 2 smashed cloves garlic, ensuring every vegetable is glistening with oil and spices.
  6. Spread the vegetable mixture across your baking sheet in a single layer.
  7. Nestle the 5 premium pork bratwursts into the vegetables. Make sure they touch the pan surface.
  8. Roast for 15 minutes. You should hear a faint sizzle as the fat begins to render.
  9. Flip the sausages and toss the vegetables gently using tongs to ensure even browning.
  10. Bake for another 10 minutes until the sausages are browned and the potatoes are tender.
