Ingredients:
- 1 lb Lacinato or Curly Kale, stems removed and finely chopped
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/2 cup dried cranberries
- 1/2 cup toasted walnuts, roughly chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup balsamic vinegar
- 3 tbsp olive oil
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place the chopped kale in a large mixing bowl. Drizzle with 1 tbsp of olive oil and 1/2 tsp of sea salt.
- Using clean hands, squeeze and massage the kale leaves firmly for 2–3 minutes until the leaves become softer, darker green, and velvety.
- In a small jar or bowl, combine the balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Slowly whisk in 3 tbsp of olive oil until the dressing is thickened and glossy.
- Toss the massaged kale with the balsamic dressing until evenly coated.
- Gently fold in the dried cranberries and toasted walnuts.
- Finish by sprinkling the crumbled feta on top.
