Ingredients:

  • 1 lb Lacinato or Curly Kale, stems removed and finely chopped
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 cup dried cranberries
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the chopped kale in a large mixing bowl. Drizzle with 1 tbsp of olive oil and 1/2 tsp of sea salt.
  2. Using clean hands, squeeze and massage the kale leaves firmly for 2–3 minutes until the leaves become softer, darker green, and velvety.
  3. In a small jar or bowl, combine the balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  4. Slowly whisk in 3 tbsp of olive oil until the dressing is thickened and glossy.
  5. Toss the massaged kale with the balsamic dressing until evenly coated.
  6. Gently fold in the dried cranberries and toasted walnuts.
  7. Finish by sprinkling the crumbled feta on top.
