Ingredients:
- 2 lbs boneless skinless chicken thighs
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 sleeve (1.75 oz) Ritz crackers, crushed
- 1 tsp garlic powder
- 1 tsp poultry seasoning
- 1/2 tsp black pepper
- 1/2 tsp salt
- 4 brioche burger buns
- 2 tbsp unsalted butter, melted
- 4 slices sharp cheddar cheese
Instructions:
- Place the chicken thighs at the bottom of the slow cooker.
- In a small bowl, whisk together the condensed soup, crushed Ritz crackers, garlic powder, poultry seasoning, salt, and pepper. Spread this mixture evenly over the chicken.
- Cover with a tight-fitting lid and cook on Low for 6 hours (or High for 3 hours) until the chicken is opaque throughout and yields easily to a fork.
- Turn off the heat. Using two forks, shred the chicken directly in the slow cooker, mixing it thoroughly with the sauce until the meat is fully coated and the texture is uniform.
- Split the buns and brush the insides with melted butter. Toast in a skillet or toaster oven until golden brown.
- Scoop a generous portion of the creamy chicken onto each bun, top with a slice of cheese if desired, and close the sandwich.
