Ingredients:
- 1.5 lbs boneless skinless chicken breasts
- 3 tbsp extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp paprika
Instructions:
- Place the chicken breasts between two sheets of parchment paper and use a meat mallet to gently pound the thickest part until the entire piece is an even thickness of about 3/4 inch.
- Whisk together the olive oil, lemon juice, minced garlic, oregano, sea salt, black pepper, and paprika in a bowl.
- Place the chicken in the marinade, ensuring every surface is coated. Seal and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat (approximately 400°F/200°C) and lightly oil the grates to prevent sticking.
- Place the chicken on the grill and sear for 5-7 minutes per side until a mahogany-colored char forms and the internal temperature reaches exactly 165°F (74°C).
- Remove the chicken from the grill and let it rest for 5-10 minutes before slicing to allow juices to redistribute.
