Ingredients:
- 3 cups (450g) fresh strawberries, hulled and quartered
- 1 cup (150g) fresh blueberries
- 3 cups (450g) fresh pineapple, diced into 1-inch chunks
- 3 kiwis, peeled and sliced into half-moons
- 1 cup (150g) mango, diced
- 1 cup (160g) red grapes, halved
- 5 tbsp (75ml) honey
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (2g) lime zest
- 1 tbsp (4g) fresh mint leaves, finely chiffonaded
- 1 pinch (0.5g) sea salt
Instructions:
- Wash all berries and grapes under cold water and pat them dry. Dice the pineapple and mango into uniform 1-inch cubes and slice the kiwis into consistent half-moons.
- In a small bowl, combine the honey, lime juice, lime zest, and salt. Whisk vigorously until the honey is fully integrated and the mixture appears glossy and translucent. Stir in the finely chopped mint at the end.
- Place all the prepared fruit into an extra-large mixing bowl. Pour the honey-lime glaze over the top and use a wide rubber spatula to gently fold the dressing into the fruit until evenly coated.
