Ingredients:

  • 6 tbsp gluten-free all-purpose flour
  • 1/2 tsp baking powder
  • 1 tbsp granulated sugar
  • 4 tbsp milk of choice
  • 1 tbsp melted butter
  • 1/4 tsp vanilla extract
  • 1 pinch salt
  • 1 tsp melted butter
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 3 tbsp powdered sugar
  • 2 tsp milk
  • 1/4 tsp vanilla bean paste

Instructions:

  1. In a 12 oz or larger microwave-safe mug, whisk together the gluten-free flour, baking powder, granulated sugar, and salt.
  2. Add 4 tablespoons of milk, 1 tablespoon of melted butter, and vanilla extract to the mug. Stir until the batter is smooth and thick.
  3. In a separate small ramekin, mix 1 teaspoon of melted butter, brown sugar, and cinnamon until it forms a thick paste.
  4. Drop small dollops of the cinnamon paste onto the batter and use a toothpick or knife to gently swirl it into the top inch of the cake.
  5. Microwave on high for 1 minute 30 seconds. Let sit for 1 minute to allow the steam to set the crumb.
  6. Whisk together powdered sugar, remaining milk, and vanilla bean paste. Drizzle the glaze over the warm mug cake before serving.
