Ingredients:
- 6 tbsp gluten-free all-purpose flour
- 1/2 tsp baking powder
- 1 tbsp granulated sugar
- 4 tbsp milk of choice
- 1 tbsp melted butter
- 1/4 tsp vanilla extract
- 1 pinch salt
- 1 tsp melted butter
- 1 tbsp brown sugar
- 1/2 tsp ground cinnamon
- 3 tbsp powdered sugar
- 2 tsp milk
- 1/4 tsp vanilla bean paste
Instructions:
- In a 12 oz or larger microwave-safe mug, whisk together the gluten-free flour, baking powder, granulated sugar, and salt.
- Add 4 tablespoons of milk, 1 tablespoon of melted butter, and vanilla extract to the mug. Stir until the batter is smooth and thick.
- In a separate small ramekin, mix 1 teaspoon of melted butter, brown sugar, and cinnamon until it forms a thick paste.
- Drop small dollops of the cinnamon paste onto the batter and use a toothpick or knife to gently swirl it into the top inch of the cake.
- Microwave on high for 1 minute 30 seconds. Let sit for 1 minute to allow the steam to set the crumb.
- Whisk together powdered sugar, remaining milk, and vanilla bean paste. Drizzle the glaze over the warm mug cake before serving.
