Ingredients:
- 1.5 lbs boneless, skinless chicken breast, cubed into 1-inch pieces
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the cubed chicken completely dry with paper towels. Toss the chicken in a bowl with salt, pepper, and smoked paprika until evenly coated.
- Heat 1 tbsp of butter in a 12-inch cast iron or stainless steel skillet over medium-high heat until shimmering.
- Add the chicken in a single layer. Sear undisturbed for 3–4 minutes until a deep golden-brown crust forms, then flip and cook for another 3 minutes.
- Reduce heat to medium. Add the remaining 2 tbsp of butter and minced garlic, stirring constantly for 1–2 minutes until fragrant.
- Stir in the lemon juice and parsley, tossing the chicken until coated in the glaze.
