Ingredients:

  • 1.5 lbs boneless, skinless chicken breast, cubed into 1-inch pieces
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the cubed chicken completely dry with paper towels. Toss the chicken in a bowl with salt, pepper, and smoked paprika until evenly coated.
  2. Heat 1 tbsp of butter in a 12-inch cast iron or stainless steel skillet over medium-high heat until shimmering.
  3. Add the chicken in a single layer. Sear undisturbed for 3–4 minutes until a deep golden-brown crust forms, then flip and cook for another 3 minutes.
  4. Reduce heat to medium. Add the remaining 2 tbsp of butter and minced garlic, stirring constantly for 1–2 minutes until fragrant.
  5. Stir in the lemon juice and parsley, tossing the chicken until coated in the glaze.
