Ingredients:

  • 1 tbsp ground flaxseed meal
  • 3 tbsp warm water
  • 1/2 cup refined coconut oil, solidified
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup dark chocolate chips (70% cacao)
  • 1 tsp pure vanilla bean paste

Instructions:

  1. In a small ramekin, combine 1 tablespoon of ground flaxseed meal with 3 tablespoons of warm water. Stir and set aside for 10 minutes to thicken into a 'flax egg'.
  2. In a medium mixing bowl, cream together the solidified refined coconut oil, coconut sugar, and maple syrup until smooth.
  3. Stir the thickened flax egg and vanilla bean paste into the oil and sugar mixture.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and fine sea salt.
  5. Gradually fold the dry ingredients into the wet ingredients until a dough forms. Fold in the dark chocolate chips.
  6. Scoop tablespoons of dough onto a lined baking sheet and bake at 350°F (175°C) for 12 minutes or until edges are golden brown.
