Ingredients:
- 1 tbsp ground flaxseed meal
- 3 tbsp warm water
- 1/2 cup refined coconut oil, solidified
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp fine sea salt
- 1 cup dark chocolate chips (70% cacao)
- 1 tsp pure vanilla bean paste
Instructions:
- In a small ramekin, combine 1 tablespoon of ground flaxseed meal with 3 tablespoons of warm water. Stir and set aside for 10 minutes to thicken into a 'flax egg'.
- In a medium mixing bowl, cream together the solidified refined coconut oil, coconut sugar, and maple syrup until smooth.
- Stir the thickened flax egg and vanilla bean paste into the oil and sugar mixture.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and fine sea salt.
- Gradually fold the dry ingredients into the wet ingredients until a dough forms. Fold in the dark chocolate chips.
- Scoop tablespoons of dough onto a lined baking sheet and bake at 350°F (175°C) for 12 minutes or until edges are golden brown.
