Ingredients:
- 3 cups all-purpose flour (375g)
- 2 cups granulated sugar (400g)
- 1 tbsp baking powder (12g)
- 1/2 tsp salt (3g)
- 1 cup vegetable oil (235ml)
- 4 large eggs
- 1 cup whole milk (240ml)
- 1 tbsp vanilla extract (15ml)
- 1 cup unsalted butter, softened (225g)
- 4 cups powdered sugar (480g)
- 3 tbsp heavy cream (45ml)
- 2 tsp vanilla extract (10ml)
- 1/4 tsp salt (1.5g)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line the bottom with parchment paper.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, vegetable oil, whole milk, and vanilla extract until smooth.
- Slowly pour the wet ingredients into the dry ingredients, mixing on medium speed until the batter is smooth and pale. Do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 25-30 minutes until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely on a wire cooling rack.
- Prepare the frosting by beating the softened unsalted butter until creamy, then mixing in the powdered sugar, heavy cream, vanilla extract, and salt until fluffy.
