Ingredients:
- 2 (15 oz / 425 g) cans black beans, rinsed and drained well
- 1 cup (90 g) rolled oats
- 1/2 cup (60 g) Panko breadcrumbs
- 1/2 cup (60 g) red onion, finely minced
- 3 cloves (15 g) garlic, minced
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (15 ml) soy sauce
- 1 tbsp (15 g) tomato paste
- 1 tsp (5 g) smoked paprika
- 1 tsp (5 g) ground cumin
- 1/2 tsp (3 g) chili powder
- 1/2 tsp (3 g) salt
- 1/4 tsp (1 g) black pepper
Instructions:
- Pat the rinsed black beans with a paper towel until no longer dripping.
- Place beans in the food processor and pulse 5-7 times until beans are broken down but still chunky; do not puree.
- Transfer beans to a mixing bowl. Stir in minced onion, garlic, Worcestershire sauce, soy sauce, tomato paste, and all dry spices.
- Fold in the rolled oats and Panko breadcrumbs. Let the mixture sit for 5 minutes to allow oats to hydrate.
- Divide the mixture into 6 equal portions (roughly 1/3 cup each).
- Roll each portion into a ball, then press down into a patty about 3/4 inch thick.
- Press a small indent into the center of each patty with your thumb to prevent doming during cooking.
