Ingredients:
- 6 bone-in, skin-on chicken thighs (approx. 3 lbs)
- 1 tbsp baking powder
- 1 tsp fine sea salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cracked black pepper
Instructions:
- Pat the chicken thighs extremely dry using paper towels to remove all surface moisture.
- In a small bowl, whisk together the baking powder, salt, paprika, garlic powder, onion powder, and pepper.
- Sprinkle the seasoning mixture evenly over both sides of the thighs, rubbing it firmly into the skin.
- Preheat oven to 425°F (218°C). Place a wire rack atop a baking sheet and arrange chicken skin-side up.
- Bake for 35–40 minutes until the skin is deep mahogany and the internal temperature reaches 165°F (74°C).
- Transfer chicken to a plate and let rest for 5–10 minutes before serving.
