Ingredients:

  • 6 bone-in, skin-on chicken thighs (approx. 3 lbs)
  • 1 tbsp baking powder
  • 1 tsp fine sea salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cracked black pepper

Instructions:

  1. Pat the chicken thighs extremely dry using paper towels to remove all surface moisture.
  2. In a small bowl, whisk together the baking powder, salt, paprika, garlic powder, onion powder, and pepper.
  3. Sprinkle the seasoning mixture evenly over both sides of the thighs, rubbing it firmly into the skin.
  4. Preheat oven to 425°F (218°C). Place a wire rack atop a baking sheet and arrange chicken skin-side up.
  5. Bake for 35–40 minutes until the skin is deep mahogany and the internal temperature reaches 165°F (74°C).
  6. Transfer chicken to a plate and let rest for 5–10 minutes before serving.
