Ingredients:
- ¾ cup (170g) unsalted butter, melted and slightly cooled
- 1 cup (200g) packed light brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- ¼ tsp (1.5g) salt
- ¼ tsp (1.5g) baking powder
- 1 ½ cups (255g) semi-sweet chocolate chips
- ½ cup (60g) chopped pecans or walnuts
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the melted butter and brown sugar until smooth.
- Beat in the egg and vanilla extract until the mixture is glossy and well-combined.
- Sift in the flour, salt, and baking powder. Gently fold the dry ingredients into the wet mixture using a rubber spatula, stopping immediately once no flour streaks remain.
- Fold in the semi-sweet chocolate chips and chopped nuts.
- Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- Bake for 22 to 25 minutes. A toothpick inserted into the center should come out with a few moist crumbs attached.
- Remove from the oven and let the blondies cool completely in the pan to allow the center to set.
